Nodoguro, the king of white fish
Nodoguro is a premium white fish that’s in season all year and known for its rich, melt-in-your-mouth fat.
Officially known as Akamutsu, this prized fish is commonly called Nodoguro—literally “black throat”—because the inside of its mouth is dark. It inhabits relatively deep waters, typically between 100 to 200 meters, and is a carnivorous species that feeds on fish, squid, and shrimp. Nodoguro can grow up to 40 cm in length and weigh as much as 1.5 kg.
Niigata is home to a wide variety of delicious white fish, including flounder, sillago, flathead, and ara. Among them, Nodoguro stands out as a luxury delicacy, known for being in season year-round and rich in flavorful fat. Often called the “Toro of white fish” or the “King of white fish,” it is one of Niigata’s most celebrated seafood treasures.
